I would show that you are aware of equal opportunities (race, culture, gender, special needs etc).
Also, its not just the children you need to have an understanding about, its the parents, and showing that you could communicate with them about their children in a confidential and friendly manner.
And, show that you understand the need for health and safety issues, risk assessments, food hygiene, washing hands etc.
And, how you could encourage self confidence and independence, ie letting them choose their own activity, put on their own coats, wash their own hands, toilet themselves, etc, if they can.
A lot of its common sense, its just remembering it!! But I'm sure you'll do well, by the sound of it, you are brimming with enthusiasm, and that should shine through. Thats the most important bit!
