think you have sort of answered that yourself.. policies, procedures and daily routine should tell them all they need to know. This should include everything needed . we have an induction check list for staff to say what we have have covered and that they have been informed on where to find information.
Depending on the staff and level of training already received we also supply a copy of EYFS to all staff on induction if they don't have one and would have this as part of a staff information file.
we have diagram of line management so they know who to speak to and a list of who is responsible for what, eg Senco, H&S officer, Equal opps officer or whatever they call it these days, Child protection officer etc etc. (but this is on noticeboard for all parents so we point them in that direction.)
Can have a daily risk assessment if you wish , things they need to check regularly, like toilets, water on floor doors closed/locked etc.
Perhaps a dress code or telephone policy just for staff.
Job descriptions may be useful, but they should all have one on employment.
Volunteers we would have an extra leaflet with things they can do and areas they are not allowed , ideas on what they can do during the session, jobs that we will ask them to do etc. as we don't have regular volunteers we don't have one but we do have one for students which is much the same.
