Your assessor could observe you setting up an activity course for the children. The course could incorporate skipping ropes, hoops, balancing along a plank of wood a few inches above grass level etc. Run the course with the children, encouraging and helping them if necessary.
After the obstacle course the children might help you prepare drinks and pieces of fruit, washing hands, cleaning fruit etc. Whilst the fruit is being eaten you could chat to the children about why fruit is good for them.

The observation will probably feature things that you do everyday and I would be surprised if your assessor has not observed you promoting health and physical development during other observations.

Hope this helps
Ann
